Based on my experience of fruit and vegetable competitions at rural shows...it's the visual appearance of each fruit and the consistency in size and appearance across all the fruit in each entry.

Top trivia: first and second were from Buttevant and Doneraile. The first steeplechase (cross country horse race) took place from the former to the latter.
